The nectar needed to make it comes from the Tasmanian leatherwood trees. The flowers of the leatherwood tree open from spring to late summer. This gives bee colonies enough time to fly to the fragrant flowers and collect the nectar.
Leatherwood honey convinces with its unmistakable aroma that first develops strongly and then slowly from soft, flowery to fruity in the mouth. A real uniqueness among the honeys worldwide.
